5 Breakfasts to Start the Day Feeling Good
Five simple, colourful breakfasts you can actually make on a weekday morning — with timings, servings and easy swaps.
Breakfast does not need to be impressive. It needs to be something you enjoy, that fits the ten minutes you actually have, and that leaves you feeling looked after rather than rushed out of the door.
These five ideas are built around ordinary ingredients, ordinary kitchens and ordinary mornings. Each one takes under fifteen minutes, most of them can be prepared the night before, and every one of them can be adapted to what you already have in the cupboard.
Berry and oat bowl — 5 minutes prep, no cooking, serves 1. Combine 50g rolled oats, 150ml milk of your choice and a spoonful of yoghurt in a jar, stir through a handful of berries, and leave overnight in the fridge. In the morning add a little more milk if it looks thick. Swap berries for chopped apple, pear or banana; swap yoghurt for a dairy-free alternative.
Eggs on toast, made a bit nicer — 8 minutes, serves 1. Two eggs scrambled gently over a low heat with a knob of butter or a splash of oil, on wholegrain toast, with sliced tomato or a handful of spinach wilted in the pan. The low heat is the whole trick.
A green smoothie you will actually drink — 4 minutes, serves 1. Blend a banana, a large handful of spinach, 150ml milk or juice, a spoonful of nut butter and a few ice cubes. Frozen banana makes it thicker and colder without watering it down.
Beans and greens on toast — 10 minutes, serves 2. Warm a tin of drained beans with a chopped tomato, a clove of garlic and a pinch of paprika, stir in a handful of spinach at the end, and pile onto toast. Keeps in the fridge for two days.
Weekend traybake breakfast — 25 minutes, serves 4. Halved mushrooms, tomatoes and thick slices of pepper on a tray with olive oil, roasted at 200C, with eggs cracked into the gaps for the last five minutes. Nice with flatbread or toast.
